Cream of artichoke soup with diced ham

Products (for 4 people)
Fresh basil leaves
2 medium onions
1 glass of white wine (250 ml)
3 cups chicken stock (750 ml)
1 piece of parmesan cheese (60 g)
1 tablespoon butter (20 g)
1 jar of artichokes (500 g)
3 tablespoons extra virgin olive oil (45 ml)
1 package diced Serrano ham (135g)
Seasonings: salt and freshly ground black pepper

Preparation
Preheat the oven to 180 ºC
Place the serrano ham cubes in a glass dish and place it in the oven to dry the sausage.
Once the cubes are dry and crispy, remove them from the oven and set them aside.
Cut the artichoke into quarters.
Separately cut the onion into circles. Then you have to stew them in a pot with a little olive oil.
When the onion softens, add the artichoke and fry again.
After about 2-3 minutes of cooking, add another tablespoon of olive oil and the wine.
Allow the wine to evaporate and pour in two cups of chicken stock. Cover the casserole and let everything cook for 20 minutes.
After the specified time has passed, check the salt content of the soup. If necessary, correct it.
Melt the butter in the microwave and add it to the previous mixture.
Cut the cheese into thin slices.
Combine the butter, cheese, cream, and the third cup of chicken stock in the blender.
Strain the cream soup through a strainer to remove the fibers.
Finally, serve and add the diced ham on top.

Artichoke and potato cream soup
Products (for 4 people)
Olive oil
4 potatoes
3 cloves of garlic
1 sprig of rosemary
500 grams (17.6 ounces) of artichokes
Seasonings: fine sea salt, parsley, and red pepper
Optional: lettuce, almonds

Preparation
First, peel the potatoes. Keep one potato unpeeled.
Then heat some water in a pot. Before it boils, add a teaspoon of salt and a sprig of rosemary.
Once the water reaches boiling point, add the potatoes to the pot.
Separately peel the artichoke (without one) and cut it into medium-sized pieces. Then add them to the pot.
Let the potatoes and artichokes cook for about 25 minutes.
When the potatoes and artichokes are well cooked, turn off the heat and strain them from the water.
Meanwhile, place a frying pan to preheat with olive oil.
Peel and slice the garlic.
Add the garlic to the pan and fry until golden on both sides. Add some chopped parsley.
Add the garlic butter to the cooked potatoes and artichokes.
Puree everything in the blender until you get a creamy mixture without lumps.
Strain the soup to remove any remaining artichoke or potato fiber.
Separately cut the potatoes and artichokes that you separated in the form of chips and fry them in the pan. Allow to drain on kitchen paper.
Before serving the cream soup, garnish with some potatoes and artichoke chips.
